Ingredients
 

  • 700 g Pumpkin meat
  • 600 g Organic ground beef
  • 50 g Leek
  • 1 Red onion
  • 2 tablespoon Tomato paste concentrated three times
  • 2 tablespoon Pumpkin seeds green
  • 2 Red peppers
  • 2 Garlic cloves chopped
  • 1 Chilli fresh
  • 0,5 Orange
  • 700 Milliliters Water
  • 1 teaspoon Freshly chopped thyme
  • 3 tablespoon Mascarpone
  • Salt and pepper
  • Styrian pumpkin seed oil

Instructions
 

  • Cut the leek into rings. Dice the onion, chop the garlic and chilli. Core and dice the peppers, dice the pumpkin flesh.
  • Fry the minced meat in the pan until crumbly. Add the onions, pumpkin seeds and tomato paste and continue frying for 2-3 minutes. Reduce the heat a little and add the pumpkin meat and fry for another 3 minutes. Add the garlic, thyme, the chilli, the squeezed juice of the half orange and the leek and pour 700 ml of water. Simmer for 20 minutes and then add the peppers and simmer for another 10 minutes.
  • Add the mascarpone, stir well and season with salt and pepper.
  • Serve with a little pumpkin seed oil and a little fresh parsley.
  • I had a nutmeg squash.
