Pumpkin pancakes

Ingredients for 4 servings:

  • 500 g pumpkin flesh (preferably butternut), diced, cooked in a little water
  • 2 eggs
  • 1 tbsp brown sugar
  • 1 pinch of salt
  • 1 tsp cinnamon
  • 7 ½ g baking powder
  • 175 g flour
  • Oil for frying
  • Cinnamon sugar for sprinkling

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Perfect Pumpkin Fritters

Mash the cooked pumpkin with a potato masher. Mix the pumpkin puree with all the other ingredients. Fry small flatbreads in a little oil in a pan until golden brown on both sides. Drain and serve sprinkled with cinnamon sugar.
