Pumpkin Pasta Bake

The perfect pumpkin pasta bake recipe with a picture and simple step-by-step instructions.

  • 450 g Pumpkin
  • 125 g Bacon
  • 1 Onion small
  • Oil
  • 350 g Cooked pasta
  • 3 Eggs
  • 200 g Cream
  • 1 tbsp Tomato paste
  • Parsley
  • Salt
  • Pepper
  • 1 Mozzarella
  1. Grease a baking dish and preheat the oven to 170 degrees.
  1. Finely dice bacon and onion and fry in a little oil.
  1. In the meantime, peel the pumpkin and cut into bite-sized pieces. Then add to the bacon and onion and cook for a few minutes.
  1. Mix the pumpkin mixture together with the pasta in the baking dish. Mix the eggs with the cream, tomato paste, salt, pepper and a little parsley and pour over the pumpkin noodle mixture.
  1. Cut the mozzarella into slices and spread them on the casserole. Bake in the oven for 10-15 minutes.
