Ingredients for 2 servings:
- 1 pack of ravioli (pumpkin ravioli)
- 2 cup(s) pumpkin flesh, diced (approx. 200 – 250 ml content)
- 1 tbsp coconut oil
- 1 tbsp coconut butter or crème fraîche
- 1 tbsp pumpkin seeds
- curry powder
- chili powder
- Ginger powder
- Salt
- 1 bunch of fresh sage, finely chopped
- 50 ml orange juice
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
Simple and vegetarian
Sauté the pumpkin and fresh sage in a pan with coconut oil until the pumpkin is tender. Cook the ravioli according to the package instructions. Season the cooked pumpkin with the spices listed, add the pumpkin seeds, and fry for another 3 minutes until crispy. Deglaze with orange juice and coconut butter and bring to a boil briefly. 500 kcal per serving.
