Ingredients for 8 servings:

  • 3 large onions, finely chopped
  • 4 garlic cloves, finely chopped
  • 50 g butter for frying
  • 1 ½ kg pumpkin flesh, diced
  • 300 ml beef broth
  • 1 sachet of spice mix for Nasi Goreng
  • 300 ml water
  • 3 tbsp soy sauce, spicy
  • 1 cup sour cream
  • Salt
  • Pepper, freshly ground
  • some whipped cream for garnishing
  • some parsley, flat, for garnishing
  • possibly pumpkin seeds, salted, for garnishing

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

For 8 people, take 3 large onions and 4 cloves of garlic. Peel both, chop finely, and fry in 50g melted butter. Add 1.5kg diced pumpkin flesh and fry for about 5 minutes. Meanwhile, bring 300ml beef stock and the Nasi Goreng spice mix to a boil in 300ml water. Deglaze the vegetables. Simmer for about 20 minutes, then puree very finely with a hand blender. Season to taste with 3 tablespoons of spicy soy sauce, freshly ground pepper, and salt. Stir in 1 cup (200g) sour cream. Season again. Serve garnished with a dollop of cream and some flat-leaf parsley or 5-6 salted pumpkin seeds.
