Ingredients for 4 servings:
- 400 g pumpkin flesh
- 1 large onion(s)
- 1 tbsp butter
- 2 tsp flour
- 1 liter vegetable broth
- Salt
- pepper
- nutmeg
- Cayenne pepper
- 250 g sour cream
- Parsley, fresh
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Dice the pumpkin. Sauté the onion in butter and add the pumpkin. Sprinkle with the flour and sauté briefly. Stir in the vegetable stock and bring to a boil. Reduce heat and simmer for 30 minutes. Blend thoroughly with an immersion blender. Season to taste with spices. Top with cream. Sprinkle with fresh parsley.
