Pumpkin Soup with Roasted Onions and Chicken Skewers
The perfect pumpkin soup with roasted onions and chicken skewers recipe with a picture and simple step-by-step instructions.
Soup
- 1500 g Pumpkin meat
- 2 size Onions
- 1 piece Solo garlic
- 20 g Ginger tuber
- 3 piece Carrots
- 3 piece Potatoes
- 2 Apples
- 3 tbsp Clarified butter
- 2 liter Vegetable broth
- 1 piece Red chilli pepper
- Salt and pepper
- Curry
- Sugar
- 1 cups Creme fraiche Cheese

- 1 tbsp Flour
- Salt
- Sugar brown
- Walnut oil
Chicken skewers for the second day
- 2 piece Chicken breast fillets
- 1 tbsp Sweet paprika
- 4 tbsp Olive oil
- Salt and pepper
- The soup was “good” enough for three people for two days.
- Chop the pumpkin flesh. Peel, wash and dice the vegetables. Peel and chop the garlic and ginger, peel, core and dice the apples. Halve the chilli lengthways and cut into thin strips.
- Brown everything in the clarified butter and deglaze with the vegetable stock. Season with salt, pepper, curry and sugar and cook for about 30 minutes at a medium temperature, stirring occasionally as it burns easily.
- In the meantime, peel the onions, cut in half and cut into strips for the roasted onions. Mix the flour, salt and sugar and mix the onions with it. Heat walnut oil in a pan and roast the onions vigorously.
- When the vegetables are done, puree the soup, stir in the crème fraìche, add seasoning if necessary and simmer gently for a few more minutes. Pour into plates or bowls and sprinkle with the fried onions.
- On the second day for the chicken skewers, wash the meat and cut into bite-sized cubes. Mix the olive oil with salt, pepper and paprika and marinate the meat in it for at least an hour. Place wooden skewers in warm water. (then the meat comes off better after grilling)
- Remove the meat from the marinade and place four pieces on the wooden skewers. Brush a grill pan with a little oil and sear the skewers in it and then simmer covered for about 15 minutes at a medium temperature. Serve the skewers with the soup
