Pumpkin soup with vodka

Ingredients for 4 servings:

  • 25 g butter
  • 1 onion(s)
  • 8 tbsp vodka
  • 1 pumpkin(s), small
  • 1 tbsp ginger
  • 500 ml chicken broth
  • 2 tbsp sugar
  • pepper
  • Salt
  • 1 tbsp nutmeg
  • 100 ml cream
  • 40 g butter, soft
  • 1 tbsp sugar
  • ½ tbsp cinnamon
  • 4 slices of white bread

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 40 minutes

Flavorful, world-class pumpkin soup

Brown the onions in the butter and deglaze with the vodka. Immediately add the entire pumpkin flesh, ginger and salt and cook for 20 minutes. Pour in the stock and stir in the sugar and pepper. Cook for another 20 minutes and then puree. In a pinch, you can also mash it. Bring back to the boil and stir in cream and nutmeg, if desired. For the croutons, mix the remaining ingredients, spread on the bread and toast for 10 minutes at 200°C. Then cut into cubes and serve in the soup. The vodka doesn’t taste through; instead, it gives the soup an intense, unique flavor. Be careful, the vodka doesn’t cook completely away; not suitable for children.
