Ingredients for 1 servings:

  • ½ lemon(s), untreated
  • ½ orange(s), untreated
  • 50 ml red wine
  • 50 ml tea, strong black
  • 2 cl rum
  • 2 cloves
  • ½ stalk(s) cinnamon
  • 250 g sugar
  • 150 g chocolate (block chocolate)
  • 200 g butter
  • 1 tbsp vanilla, ground
  • 3 eggs
  • 300 g flour
  • 2 tsp baking powder
  • 200 g powdered sugar
  • Fat, for the tray

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Grate the lemon and orange zest and squeeze out the juice. Heat with wine, tea, rum, cloves, cinnamon, and 50g of sugar. Grate the chocolate. Mix the butter, vanilla, remaining sugar, eggs, flour, baking powder, chocolate, and 125ml of strained, cooled punch to a batter. Spread the batter onto a greased baking tray and bake on the middle shelf of an oven preheated to 200°C (gas mark 3) for 25 minutes. Mix the icing sugar with about 4 tbsp of punch and glaze the cake. Once the glaze is set, cut the cake into not-too-large triangles.
