Wafer sheets (wafers) – cake with mocha cream

Ingredients for 1 servings:

  • 1 pack of wafer sheets (cake plates) (5 sheets)
  • 40 g flour
  • 50 g sugar
  • 200 ml milk
  • 1 tbsp vanilla sugar
  • 1 egg yolk (or 1 whole egg)
  • 250 g sugar
  • 15 g coffee powder, finely ground and slightly roasted
  • 250 g margarine or butter
  • possibly chocolate coating

Instructions

Working time approx. 20 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 20 minutes

Mix all ingredients except the waffles well and bring to the boil, stirring constantly. Allow to cool. In the meantime, mix 250g margarine, 250g sugar and 15g ground and slightly toasted coffee grounds well. Mix everything together and spread a very thin layer over the waffles (there are 5 in total). Place the last layer on top of the others and weigh the cake down with a flat object. I always put a baking tray on top and a couple of tetra packs of juice and leave it like that overnight. The next day, cut into cubes. You can leave it as it is or sprinkle with chocolate coating. Variations: If you leave out the coffee and add the following, you get: -Chocolate/cocoa filling: omit the coffee and use 30g of cocoa instead, or -Lemon filling: Instead of coffee, use the zest and juice of half a lemon -Orange filling: Instead of coffee, use the zest and juice of half an orange This cake is very easy to make and will keep for a long time.
