Quark and cherry cake

Ingredients for 1 servings:

  • 100 g butter
  • 125 g sugar
  • 1 tbsp vanilla sugar
  • 2 eggs
  • 150 g flour
  • 50 g cornstarch
  • 1 tsp baking powder
  • some butter for the mold
  • 500 g sweet cherries
  • 4 eggs
  • 150 g butter
  • 150 g sugar
  • 2 tbsp vanilla sugar
  • 750 g low-fat curd cheese
  • 100 g cornstarch

Instructions

Working time approx. 45 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 55 minutes

Preheat the oven to 180°C (top/bottom heat) and grease the springform pan with a little butter. Beat the butter with the sugar and vanilla sugar until light and fluffy, then stir in the eggs. Combine the flour, cornstarch, and baking powder, then mix everything together and mix well. Pour the batter into the springform pan and bake in the preheated oven for 20 minutes. Wash the cherries, drain them, and pit them if necessary. To make the quark mixture, separate the eggs and then mix the butter with the sugar, vanilla sugar, and egg yolks. Beat the egg whites until stiff peaks form. Then mix in the quark. Fold in the beaten egg whites, cornstarch, and cherries. Spread the quark mixture over the cake, bake for another 50 minutes, then let stand in the switched-off oven for about 10 minutes. Finally, sprinkle the cooled cake with powdered sugar.
