Ingredients for 2 servings:
- 150 g low-fat curd cheese, drained and weighed (approx. 200 g wet)
- 80 g sugar
- 2 egg yolks
- 1 tbsp cornstarch
- 50 g flour
- 70 g cranberries, dried and sugared
- some oil or butter for frying

Place the quark in a kitchen towel and let it drain overnight in a sieve. Mix the now firm quark with the remaining ingredients until a firm dough forms. Scoop out balls with a tablespoon and shape them into balls about 1 cm thick. Fry the balls in butter or oil over medium heat. The finished balls can be served with a sweet side dish. Sprinkled with sugar, with applesauce, jam, etc. This quantity is enough for about 7 balls. More of a dessert. As a main course for 2 people, it’s better to make a little more (1.5 times the amount)!
