Quark rolls

Ingredients for 3 servings:

  • 500 g potatoes
  • 375 g quark
  • 150 g flour
  • 70 g sugar
  • some lemon peel
  • 1 handful of raisins
  • some clarified butter
  • 1 jar applesauce

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Place the potatoes in a pot of water and boil. It’s best to do this a day in advance, as the potatoes still need to cool. Grate the potatoes into a bowl. Add the quark, flour, sugar, and raisins (if desired). Blend with a hand mixer on medium speed until smooth. Form the mixture into hand-sized rolls. Heat a pan with a little clarified butter. Add the quark rolls and fry until golden brown on each side. Serve with apple sauce.
