Quark – semolina – blueberry – cake

Ingredients for 1 servings:

  • 100 g butter or margarine, melted, cooled
  • 200 g blueberries, washed and sorted
  • 750 g low-fat quark, cream quark is not suitable
  • 3 eggs
  • 6 tbsp semolina (durum wheat)
  • 250 g sugar
  • 1 packet of vanilla sugar
  • 1 pack of pudding powder (vanilla flavor), for cooking
  • 2 tsp baking powder
  • 1 lemon(s), untreated, zest and juice or
  • ½ small bottle(s) of flavoring (lemon flavor)
  • Fat for the mold
  • semolina for the mold
  • possibly plum(s) for garnishing
  • e.g. powdered sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the blueberries and drain well, otherwise the cake will be too wet. Whisk together the quark, eggs, semolina, sugar, vanilla sugar, pudding powder, baking powder, and lemon juice. Stir in the melted butter. Carefully fold in the blueberries, ensuring they remain as intact as possible. Grease a 26 cm springform pan and sprinkle with semolina. Pour the cake mixture into the pan, garnish with a few plums, if desired, and bake in a preheated oven (top/bottom heat: 175°C, gas mark 2) for approximately 60-70 minutes. Remove from the pan and allow to cool completely. Dust with powdered sugar.
