Quick and easy potato and tomato pan

Ingredients for 2 servings:

  • 4 potatoes
  • salt water
  • 1 onion(s)
  • 4 tomatoes
  • salt and pepper
  • Vegetable broth, vegan, instant
  • Oregano, dried
  • possibly chili or paprika powder or similar.
  • some olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Boil the potatoes in salted water until tender, then peel and slice (halve large slices). Dice the tomatoes and chop the onion (if you want something chewy later, you can chop roughly). Sauté the onions in a little olive oil, then add the potatoes and fry. Then add the tomatoes, mix everything together, and let it simmer for a few minutes. Season to taste with salt, pepper, vegetable stock, and oregano. If you like it spicy, add chili powder, paprika, or something similar. The whole thing will be a bit mushy if you let the tomatoes simmer for a long time, but the potatoes give it a wonderfully creamy texture.
