Quick and easy vegetable patties

Ingredients for 4 servings:

  • 1 can kidney beans
  • 1 can peas
  • 1 can of corn
  • 2 eggs
  • n. B. Flour
  • e.g. breadcrumbs, possibly wholemeal
  • some oil
  • salt and pepper
  • possibly chili powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Rinse the beans, peas, and corn, drain well, and place in a bowl. Blend until pureed. Some peas and corn kernels can be left whole. Season the mixture with salt and pepper, and perhaps a pinch of chili. Cover a plate with enough flour, beat the two eggs in a bowl, and cover another plate with the breadcrumbs. Take a small amount of the vegetable mixture and form it into a ball. Roll the ball in the flour until completely covered. You can also flatten it (if you like). Then place the ball in the bowl with the egg until it is coated. Then roll it in the breadcrumbs. Pour oil into a pan and heat it. Once the oil is hot, add the balls or patties to the pan. Once they are golden brown on one side, turn them over. Now just dab off some of the fat with kitchen paper.
