Ingredients for 1 servings:

  • 500 g flour (type 405)
  • 50 g sugar
  • 50 g butter, melted
  • 1 pinch of salt
  • 250 ml milk, lukewarm
  • 1 cube of yeast
  • 2 eggs
  • 50 g raisins
  • 800 g clarified butter for frying
  • Flour for working

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Ready in 1 hour – makes about 18 pieces.

Sift the flour into a bowl. Add the sugar and salt. Crumble the yeast into the lukewarm milk and dissolve. Add it to the flour and knead with the dough hook of a hand mixer, adding the eggs and butter and kneading into a soft yeast dough. Finally, briefly fold in the raisins. Dust a kitchen towel with flour. Scoop out the dough in portions using a floured tablespoon and roll into small balls with floured hands. Place on the prepared towel and let stand, covered, until the oil is hot. Now heat the clarified butter in a pan. Using greased fingers, form the balls into cakes, making sure the center is nice and thin but has no holes. Then place the cake in the hot oil and immediately ladle a tablespoon of fat over it to help it rise. When the underside is golden brown, turn the cake over with two tablespoons and finish baking. Remove from the oil and let cool on a wire rack. Dust with powdered sugar before serving if desired.
