Ingredients for 1 servings:
- 1 vanilla pod(s)
- 3 eggs
- 3 tbsp honey, liquid, mild (e.g. acacia honey)
- 100 g whole wheat flour
- 50 g ground almonds
- ¼ tsp cream of tartar baking powder
- 1 pinch(s) of iodized salt
- 1 tsp cardamom powder
- 100 g almonds, chopped or whole kernels

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes
Wholesome Christmas cookies, delicately spicy in taste, makes about 40 pieces.
Carefully split the vanilla pod lengthwise with a sharp knife and scrape out the seeds. Beat the eggs with the honey until frothy, then add the vanilla seeds. Mix the wholemeal wheat flour and almonds with the cream of tartar, iodized salt, and cardamom and stir into the egg and honey mixture. Stir well. Preheat the oven to 180°C (top/bottom heat, fan oven: 160°C) and line a baking tray with baking paper. Using two teaspoons, place small mounds of dough on the tray, sprinkle with the chopped almonds, and press down lightly. Bake on the middle rack for approx. 10-15 minutes. Tip: Instead of the chopped almonds, you can also place a whole peeled almond kernel on each mound of dough.
