Quick chicken baguette with lime cream

Ingredients for 4 servings:

  • 2 baguette rolls
  • 4 chicken breast fillets
  • 4 tbsp soy sauce
  • some cayenne pepper
  • 4 tbsp oil
  • 1 organic lime(s)
  • 8 tbsp salad mayonnaise
  • ½ lettuce(s)
  • 1 cucumber(s)

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Bake the baguettes according to the package instructions and let them cool. Brush the chicken breasts all over with soy sauce and season with cayenne pepper. Heat the oil in a pan and sear the chicken breasts all over. Reduce the heat and cook until cooked through. Alternatively, cook in the oven at 160°C for 20 minutes. Wash the lime in hot water, pat dry, grate the zest and squeeze out the juice. Mix the zest and 4 tablespoons of juice with the salad mayonnaise. Remove the lettuce leaves from the top, wash and spin dry. Wash the cucumber and slice lengthwise into thin strips using a vegetable peeler. Slice the chicken breast. Halve the baguettes horizontally and spread both sides with lime cream. Place the lettuce leaves on the bottom halves, place the chicken slices on top and top with cucumber strips. Place the top on top and enjoy.
