Quick colorful pasta dish

Ingredients for 4 servings:

  • 400 g pasta, e.g. penne or spirelli
  • 300 g green beans
  • 1 red bell pepper(s)
  • 1 bell pepper(s), orange
  • 3 tbsp black olives, pitted, cut into rings
  • 200 g feta cheese (sheep’s cheese)
  • Salt
  • Pepper, colored, from the mill
  • some olive oil for frying
  • Salt water for cooking the pasta

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

with green beans, peppers, olives and feta

Cook the pasta in plenty of boiling, lightly salted water until al dente. About 5 minutes before the end of the cooking time, add the beans and cook. Then drain and let them drain. Halve the peppers, deseed them, remove the white membranes, and cut the pepper halves into strips. Heat a little olive oil in a large pan and fry the pepper strips over medium heat for about 2 to 3 minutes. Then add the pasta and green beans and fry for about 5 minutes, stirring occasionally. Stir in the olive rings, season with a little salt and a few turns of freshly ground pepper, crumble the feta over the top, and serve. The dish also tastes good cold as a salad.
