Quick cream of broccoli soup

Ingredients for 4 servings:

  • 1 bunch of broccoli
  • 1 bunch of soup vegetables (celery, leek, carrot, parsley)
  • 1 potato(s), floury
  • Water
  • salt and pepper
  • nutmeg
  • Vegetable stock powder, organic
  • 1 shot of soy cream (Soy Cream Cuisine), optional

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Clean and chop the vegetables. Place everything in a pot, season, and add enough water to just cover the vegetables. Bring the soup to a boil, cover, and simmer for about 20 minutes. Blend everything together while still hot, including the cooking water and a dash of cream if desired. Season to taste, and serve.
