Ingredients for 4 servings:
- 1 pkt. Potato(s) (fried potatoes, ready-made product, 400 g)
- 1 bunch radishes, quartered
- 150 g cocktail tomatoes, quartered
- 2 shallots, finely diced
- 4 tbsp olive oil
- 100 ml chicken broth, instant
- 3 tbsp sherry vinegar
- 1 tsp, heaped Dijon mustard
- 1 tsp rosemary, chopped
- Salt
- Black pepper, freshly ground
- 2 tbsp flat-leaf parsley, chopped
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Fry the fried potatoes until golden brown according to the package instructions. Place the fried potatoes, radishes, and cherry tomatoes in a salad bowl and toss to combine. Heat the olive oil in a pan, sauté the shallots, stir in the chicken stock, vinegar, and mustard, remove from the heat, and season with rosemary, salt, and pepper. Pour the marinade over the salad, gently fold in, and sprinkle with parsley. Serve immediately.
