Kohlrabi Rösti à la Gabi

Ingredients for 4 servings:

  • 400 g kohlrabi with leafy greens
  • 500 g waxy potatoes, peeled, grated
  • 1 large onion(s), chopped
  • 3 tbsp flour
  • 2 tbsp sesame seeds
  • Salt
  • Black pepper, freshly ground
  • 3 tbsp rapeseed oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 48 minutes

Peel and grate the kohlrabi. Chop the greens. Mix the kohlrabi, kohlrabi greens, potatoes, onions, flour, and sesame seeds together and season with salt and pepper. Heat 1 tablespoon of rapeseed oil in a large nonstick pan and fry 4 hash browns, turning occasionally, for about 6 minutes until crispy. Use the remaining oil and batter to make 8 more hash browns. Serve with a leaf salad.
