Quick hummus dip

Ingredients for 1 servings:

  • 3 cans of chickpeas
  • 3 tbsp coriander
  • 200 g sour cream
  • ½ tsp salt
  • 2 garlic cloves, halved
  • 1 tbsp sesame paste Tahina, but works without
  • 7 tbsp olive oil
  • 2 tbsp parsley, finely chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Drain the chickpeas and blend them in a bowl with garlic, salt, coriander, and tahini using a hand blender. While blending, add the sour cream a spoonful at a time until the desired consistency is reached. Don’t overblend; you want to retain the nutty flavor and bite. Pour the mixture into a shallow baking dish and smooth it out. Use a teaspoon to make small indentations in the mixture, sprinkle with parsley, and drizzle with olive oil. Serve with pita bread or flat Arabic bread.
