Tahini-yogurt sauce with rose harissa and honey

Ingredients for 1 servings:

  • 2 garlic cloves
  • 2 tbsp parsley
  • 100 g mild yogurt, 3.5% fat
  • 4 tbsp tahini
  • 2 tsp harissa paste
  • 2 tbsp honey, liquid
  • 60 ml lemon juice
  • 1 tbsp sumac
  • ½ tsp cumin
  • 2 tsp rose water
  • salt and pepper

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Peel and grate the garlic. Wash the parsley, shake it dry, and chop finely. Blend the yogurt with tahini, harissa paste, honey, and lemon juice until smooth. Add the grated garlic, sumac, and cumin and mix. Fold in the chopped parsley. Season the sauce with rose water, pepper, and salt. This sauce goes well with roasted cauliflower, but also with carrots, falafel, or even chicken. Tip: Using garlic powder and dried parsley instead of fresh ingredients extends the shelf life of the sauce.
