Quick Italian pasta salad with mortadella

Ingredients for 4 servings:

  • 250 g pasta (spiral pasta, the smallest, short cooking time)
  • 1 bell pepper(s), red
  • 150 g sausage (mortadella)
  • 15 olives, black, approx.
  • 1 can of corn (425ml)
  • 75 ml red wine vinegar
  • 150 ml tomato ketchup
  • 150 ml oil, neutral
  • ½ tsp paprika powder, hot
  • 1 pinch of salt
  • 35 ml cognac
  • 1 clove(s) garlic, finely chopped
  • ½ handful of basil
  • ½ handful of parsley, flat
  • ½ bunch chives

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

without cheese and mayonnaise

Cook pasta according to instructions, then rinse in cold water. Clean the bell peppers and slice them into thin strips. Cut the mortadella into thin strips. Drain the corn. Combine all ingredients with the olives in a bowl. Finely chop the basil, parsley, and chives. Mix the remaining dressing ingredients thoroughly. Then add the herbs and dressing to the salad ingredients and mix well. Let it chill for at least an hour.
