Quick linguine with tomatoes and mozzarella

Ingredients for 2 servings:

  • 300g linguine
  • 1 onion(s), red
  • 1 pointed pepper, red
  • 6 cherry tomatoes
  • 50 g mini mozzarella
  • 1 bunch of cress
  • 1 tsp tomato paste
  • 50 g Parmesan, grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Cook the pasta in plenty of salted water. After draining, add a little olive oil to the linguine to prevent it from sticking. Heat a pan. Finely slice the onion. Finely chop the bell peppers. Lightly press the cherry tomatoes down with the flat side of a knife. Halve the mini mozzarella balls. First, briefly fry the onions and bell peppers in the hot pan. Then fold in the linguine. Stir in the cherry tomatoes and mozzarella balls. Finally, mix in the trimmed cress and tomato paste. Toss everything well and season with salt and pepper. Arrange the linguine on plates and sprinkle with Parmesan cheese.
