Ingredients for 4 servings:
- 500 g asparagus, green
- 4 garlic cloves
- 1 organic lemon(s)
- 70 g Parmesan cheese in one piece
- 2 tbsp butter
- 2 tbsp olive oil
- 500g spaghetti
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes
Wash the asparagus, peel the lower part, and trim off any woody parts. Cut the asparagus into bite-sized pieces. Peel and finely chop the garlic. Wash and dry the lemon, zest, and squeeze out the juice. Finely grate the Parmesan cheese. Heat butter and olive oil in a pan and sauté the garlic over medium heat. Add the asparagus and sauté until tender but still firm to the bite. Prepare the spaghetti according to the package instructions. Add the lemon juice and zest to the asparagus, along with a ladleful of pasta water, and season with salt and pepper. Just before serving, mix the Parmesan cheese into the asparagus and serve with the hot spaghetti.
