Quick Mie Noodle Fish Stir Fry

Ingredients for 2 servings:

  • 125 g mie noodles
  • 270 g pollock fillet(s)
  • 2 tbsp oil for frying
  • 250 g vegetables (stir-fried vegetables), frozen
  • 2 tbsp oil for frying
  • 125 ml vegetable stock
  • 1 tbsp soy sauce
  • ½ tsp sambal oelek
  • ½ tsp Asian spice mix
  • ½ tsp ginger, grated
  • possibly salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

with wok vegetables

Rinse the fish fillets with cold water and pat dry. Cut into large cubes, season with salt, pepper, and lightly flour. Fry on all sides in hot oil in a wide pan, or wok if desired. Remove the fish cubes from the pan and keep warm. Cook the mie noodles according to the package instructions, drain, and keep warm. Fry the vegetables in hot oil over high heat for 5-7 minutes, stirring frequently. Deglaze with the vegetable stock and reduce the heat. Season with soy sauce, sambal oelek, Asian spice, and ginger. Fold in the mie noodles evenly and add the fish cubes. Heat everything thoroughly and season with salt and pepper, if desired.
