Ingredients for 4 servings:
- 500 g minced meat
- 5 m.-sized potatoes
- 1 bell pepper(s)
- 1 small zucchini
- 1 m.-sized onion(s)
- 1 can mushrooms, or fresh
- 1 can of corn
- 1 clove(s) garlic
- 1 jar Ajvar (mild), approx. 350 ml jar
- 5 tbsp tomato ketchup
- salt and pepper
- Paprika powder
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
with potatoes and vegetables
Roughly dice the onion, finely chop the garlic clove, and fry both with the minced meat. Season with salt and pepper at this point. Fry the minced meat until browned and crumbly. While the minced meat is cooking, peel the potatoes and cut them into bite-sized cubes, just like the peppers. Drain the mushrooms (clean and slice fresh mushrooms) and corn. Add everything to the minced meat and simmer with the lid closed for about 15 minutes. I add the zucchini last, as it would otherwise become very soft. I halve the zucchini lengthwise and then cut it into slices about 0.5 cm wide. Add the zucchini to the pan and simmer for about 10 minutes. Finally, stir in the ajvar and ketchup. Season with salt, pepper, and paprika, and simmer for about another 10 minutes. Check the potatoes are tender at the end. Increase the cooking time if necessary. Tip: I love using up whatever vegetables I have around the house. It also tastes great with eggplant, carrots, and leeks. If you don’t have any potatoes, rice or Ebly also goes well with the minced meat pan.
