Quick Neutral Tomato Sugo

The perfect quick neutral tomato sugo recipe with a picture and simple step-by-step instructions.

  • 1 kg Beefsteak tomatoes
  • 250 g Onion red
  • 4 middle Garlic cloves
  • 3 tablespoon Rapeseed oil
  • 2 teaspoon Salt
  • 2 tablespoon Tomato paste
  • 4 tablespoon Ketchup
  • 2 teaspoon Balsamic vinegar
  • 1 teaspoon Hot & sweet chili sauce

  1. in autumn, when there are still (too) many tomatoes in the garden, we prepare a supply of Tuscan sauce and freeze it orig. Tuscan Sugo (with root vegetables, Mediterranean herbs and various Italian spices) … this Sugo is eaten as a quick meal with pasta, but also used as a tomato base for various dishes … but sometimes the Italian flavor doesn’t really go with the planned dish. .. therefore this year I am also starting an experiment with a neutral tomato sauce, which you can change to suit the dish if necessary …

preparation

  1. Wash beefsteak tomatoes and peel off the skin (this works perfectly with fully ripe tomatoes from the garden, if you have bought tomatoes, you should first dip them briefly in boiling water so that the skin can be peeled off easily) – cut tomatoes into pieces – onion peel and cut into small cubes – peel the garlic and cut into small cubes

  1. Roast the onion and garlic in the hot oil until the onion has a light color and roasted aromas – add the tomato pieces and cook vigorously for about 5 minutes, stirring occasionally – then add salt, tomato paste, ketchup, balsamic vinegar (please use a fruity, sweet variety! ) and chili sauce – the whole thing is now boiled down for about 10 minutes until the tomatoes disintegrate and the sauce has a creamy, slightly lumpy consistency – (do not cover so the liquid can boil off) – allow to cool, fill into portion containers and freeze

I have to say quickly …

  1. 4 …. that this new sauce really convinced us both in terms of its lightning-fast preparation and taste, although it does not contain any herbs or root vegetables … a perfect tomato base sauce for a wide variety of dishes, but also tastes very tasty with spaghetti (If you like, you can add oregano, basil, etc. to this afterwards, but we didn’t think it was necessary)

Info about the tomatoes …

  1. You should preferably use ripe beefsteak tomatoes for this sauce, as they have more pulp and less liquid and also have a different flavor than conventional tomatoes
