Ingredients for 2 servings:
- 200 g noodles, chow mein
- 2 cloves garlic, finely chopped
- 1 tsp, sautéed chili pepper(s), coarsely ground
- 2 bunch of spring onions
- 80 g peanuts, salted
- 1 lime(s)
- 2 tbsp oil (peanut oil)
- 1 tbsp sugar, brown
- 6 tbsp soy sauce
- 2 eggs
- some salt
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Cook the noodles according to the instructions, drain well, and rinse well. Trim the spring onions and cut into 2cm pieces. Roughly chop the peanuts. Halve the lime and squeeze the juice. In a bowl, whisk 2 tablespoons of lime juice with the sugar, soy sauce, and eggs. Heat the oil in a large, non-stick pan. Lightly sweat the garlic and chili. Add the spring onions and fry for a further 3 minutes. Add the noodles and fry for a further 3 minutes, turning occasionally (using two tablespoons is best). Pour the egg mixture over the top and stir-fry over medium heat until the egg sets. Stir in the peanuts and season with lime juice and salt.
