Quick potato and apple pan

Ingredients for 1 servings:

  • 2 medium-sized potatoes, cooked
  • 1 m.-sized apple
  • 6 black olives
  • 1 tbsp olive oil
  • 2 slices of mozzarella
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Cut the potatoes and apple into small pieces. Heat the olive oil in a nonstick pan. Fry the diced potatoes and apple, then reduce the heat to medium after one minute. Halve or quarter the olives and add them. Fry everything for about five to seven minutes, then add the mozzarella in small pieces and let it melt. Do not stir, as otherwise the cheese will become too rubbery. Transfer everything to a plate and season with salt and pepper to taste.
