Carrot potato soup with sausages

Ingredients for 3 servings:

  • 500 g carrot(s), fresh
  • 500 g potatoes
  • 1 m.-sized onion(s)
  • 4 tsp vegetable stock powder
  • 750 ml water
  • pepper
  • Salt
  • 1 pinch(s) of sugar
  • 4 Vienna sausages
  • e.g. parsley
  • oil

super quick delicious soup

Peel the carrots, halve them lengthwise and cut into 1 cm thick slices. Peel the potatoes and also cut them into 1 cm thick pieces. Peel the onion and cut into small cubes. Heat a little oil in a non-stick pan and sauté the onions. Add the carrots and potatoes and sauté until they smell sweet. Add 750 ml of water and bring to a boil with the lid closed. Now add 4 slightly heaped teaspoons of vegetable stock, season with salt, pepper and sugar and simmer gently with the lid half open for approx. 15-20 minutes until the soup is the desired degree of tenderness. Now carefully mash the soup with a masher until it forms a porridge. Slice the Vienna sausages and let them warm in the soup. Add a little more parsley if desired. If you like, you can fry some smoked ham in the pan before adding the onions; this will give the soup a stronger flavor.
