Quick rice noodle and vegetable soup

Ingredients for 2 servings:

  • 4 onions (spring onions)
  • 250 g mushrooms
  • 1 tbsp oil, neutral
  • 750 ml vegetable broth, as little salt as possible
  • 1 tbsp fish sauce
  • 1 lime(s)
  • 100 g rice noodles
  • 1 star anise

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Slice the spring onions and mushrooms. Heat the oil in a pan and sauté the spring onions and mushrooms. After a few minutes, pour in the vegetable stock. Add the star anise and simmer for a few minutes. Add the fish sauce and gradually squeeze in the lime juice until the desired acidity is reached. Season with salt if necessary. Add the rice noodles and let them simmer for about 1-4 minutes, depending on the type of noodles. Garnish with fresh cilantro, if desired, and serve. Tip: The soup also tastes good with other vegetables.
