Quick strawberry cake

Ingredients for 4 servings:

  • 175 g margarine or butter
  • 175 g sugar
  • 2 packets of vanilla sugar
  • 3 eggs
  • 150 g cornstarch
  • 75 g flour
  • ½ tsp, heaped baking powder
  • Strawberries, sugared
  • cream, whipped
  • possibly grease for the mold

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Pour the softened butter into a deep bowl. Add the sugar, vanilla sugar, eggs, cornstarch, flour, and baking powder and mix everything thoroughly with a hand mixer on the highest setting. Mix for at least 2 minutes. Pour the batter into a greased or parchment-lined loaf pan, place in an oven preheated to 175-200 degrees Celsius (160 degrees Celsius fan-assisted), and bake for 60 to 70 minutes. After baking, let cool briefly and then turn out of the pan. Once cooled, slice and top with sugared strawberries and whipped cream. It also tastes great without fruit and cream; in that case, it’s called a sandwich cake.
