Quick Sweet Potato Hash Browns

Ingredients
 

  • 250 g Sweet potatoes
  • 1 Pc. Egg
  • Salt pepper
  • 30 g Millet flakes
  • 20 g Tomato paste
  • 1 tbsp Chopped parsley
  • Fat for frying

Instructions
 

  • Grate the sweet potatoes very finely and mix with the other ingredients in a bowl. If you like, you can add additional spices (e.g. ginger, chilli, paprika powder, etc.; so the hash browns get a different flavor every time).
  • Heat the fat in a pan and add about a heaped tablespoon of the mixture to each rösti and smooth it out. Fry each side for about 4-5 minutes over medium heat until crispy. Then degrease on kitchen paper and keep warm in the oven.
  • I like to top the hash browns with a slice of soft goat cheese after turning them and let it melt slightly 🙂
  • It goes well with lettuce, smoked salmon, various dips, scrambled eggs, etc.
