Quick yogurt mousse with peach compote

Ingredients for 2 servings:

  • 300 g yogurt, 1.5% fat
  • 1 sachet of Gelatinefix or instant gelatin
  • 2 peaches
  • some agave syrup or honey

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour

Wash the peaches, pat dry, halve, and pit them. Cut one peach half into 6 thin wedges, place on a plate, cover, and set aside. Cut the remaining peaches into small cubes. Briefly bring the cubes to a boil in a small saucepan with a little water and honey or agave syrup, stirring constantly. Immediately reduce the heat, cover, and simmer for 5-10 minutes until soft. Allow to cool slightly and puree, then transfer to a small bowl, cover, and set aside to cool. Season the yogurt with agave syrup and gradually stir in the gelatin mix with a whisk until the yogurt thickens slightly. Cover and refrigerate until ready to serve. Scoop out one or two corners of the yogurt mixture with a spoon and arrange on a plate. Either spoon the peach compote onto the plate first, forming a mirror image, or arrange it around the yogurt mousse afterward. Place the reserved peach wedges slightly diagonally into the yogurt mousse to decorate. Also tastes delicious with apricots.
