Ingredients for 2 servings:

  • 4 quinces
  • 500 ml apple cider vinegar
  • 300 g sugar
  • 4 cloves
  • 4 juniper berries
  • 4 star anise

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Accompaniment to cheese or meat terrines

Makes 2 jars (50 cl each). Peel and quarter the quinces, core them, and thinly slice the flesh. Boil the vinegar with the sugar and spices for 5 minutes, stirring to dissolve the sugar. Add the quinces to the liquid and simmer for about 30 minutes, until soft. Layer the quinces and spices in the jars and pour in the boiling liquid. Seal the jars tightly. The jars can be stored unopened for up to one year.
