Quinoa, beetroot, and apple pan

Ingredients for 4 servings:

  • 3 beetroots
  • 3 apples, green, e.g. Granny Smith
  • 2 onions
  • 300 g feta cheese
  • 250g quinoa
  • n. B. water
  • 1 dash of olive oil
  • 1 pinch of salt

Instructions

Working time approx. 20 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

simple and vegetarian

First, wash the quinoa. Then, cook it in water with a pinch of salt for 10 minutes according to the package instructions. Remove the pot from the heat and let it swell with the lid on for another 10 minutes. Meanwhile, slice the onions into half rings. Cut the beets, apples, and feta cheese into large cubes. Sauté the onions in olive oil over high heat. When they are translucent and starting to brown, add the beets. After about 2 minutes, add the apples, followed by the feta cheese. Sauté for about 5 minutes over medium heat. Finally, add the quinoa to the remaining ingredients in the pan and mix everything together. The dish is delicious served with a fresh lemon juice squeezed over the colorful plate.
