Quinoa power salad with tomatoes and avocado

Ingredients for 4 servings:

  • 1 cup quinoa
  • 1 cucumber(s)
  • 1 avocado(s)
  • 10 cocktail tomatoes
  • 1 ½ bunch parsley
  • 1 tsp salt
  • 1 dash of olive oil
  • Chili from the mill
  • Pepper from the mill

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Wash the quinoa in a sieve, cover with water in a pot, and simmer for 20 minutes. In the meantime, dice the tomatoes, avocado, and cucumber, and chop the parsley. The quinoa should have the consistency of soft rice; then you can rinse it under water. I always place the sieve on kitchen paper afterward so the quinoa dries a bit and fluffs up. Mix with the diced vegetables and parsley, season with salt, and a little more pepper to taste. Add a little olive oil and chili. Freshly ground chili is particularly fresh and stimulates digestion. The slight spiciness is a nice contrast to the somewhat bland cucumber. Mix everything well and serve.
