Spelt with caramelized cherry tomatoes

Ingredients for 2 servings:

  • 150 g spelt like rice or soft wheat
  • 150 g cherry tomatoes
  • 1 large onion(s), red
  • 1 clove(s) garlic
  • 5 tbsp olive oil
  • 1 bunch of Italian herbs, fresh
  • 1 tsp sugar
  • ½ grapefruit(s)
  • salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Cook the spelt according to the package instructions in twice the amount of lightly salted water until the water is absorbed, then toss with a tablespoon of olive oil. In the meantime, wash the cherry tomatoes and score them crosswise. Heat 1 tablespoon of olive oil in a pan, add the whole garlic clove and the tomatoes, sprinkle with the sugar, and let it caramelize. The garlic clove can then be removed. Peel the onion, halve it, and cut into thin strips. Wash and chop the herbs, and mix both well with the spelt. For the dressing, squeeze the grapefruit and mix the juice with salt and pepper and the remaining olive oil. Mix the spelt with the dressing and serve with the caramelized tomatoes and fresh herbs.
