Quinoa Tabbouleh .. Fresh and Tasty with Plenty of Iron!
The perfect quinoa tabbouleh .. fresh and tasty with plenty of iron! recipe with a picture and simple step-by-step instructions.
- 200 g Quinoa – wash out well because of the bitter substances
- 500 ml Water
- 1 tsp Dried mint (or 1 tbsp fresh)
- 2 tbsp Lemon juice
- 4 tbsp Olive oil
- 1 tsp Salt
- 1 tsp Pepper
- 2 Pc. Spring onions
- 1 size Tomato – pitted and diced
- 0,25 Cucumber – peeled, pitted, diced into small pieces
- 2 tbsp Parsley – chopped
- 2 tbsp Sesame – toasted
- Bring the quinoa to the boil with the water and simmer for 15 minutes.
- Let it cool down a little and add mint, olive oil, lemon juice, salt and pepper to the lukewarm quinoa and let it steep until it is completely cold.
- Add the remaining ingredients, mix in and let steep again.
