Quinoa Tabbouleh .. Fresh and Tasty with Plenty of Iron!

The perfect quinoa tabbouleh .. fresh and tasty with plenty of iron! recipe with a picture and simple step-by-step instructions.

  • 200 g Quinoa – wash out well because of the bitter substances
  • 500 ml Water
  • 1 tsp Dried mint (or 1 tbsp fresh)
  • 2 tbsp Lemon juice
  • 4 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 Pc. Spring onions
  • 1 size Tomato – pitted and diced
  • 0,25 Cucumber – peeled, pitted, diced into small pieces
  • 2 tbsp Parsley – chopped
  • 2 tbsp Sesame – toasted
  1. Bring the quinoa to the boil with the water and simmer for 15 minutes.
  2. Let it cool down a little and add mint, olive oil, lemon juice, salt and pepper to the lukewarm quinoa and let it steep until it is completely cold.
  3. Add the remaining ingredients, mix in and let steep again.
