Rabbit Mallorca style

Ingredients for 2 servings:

  • 1 rabbit, approx. 1.5 kg with liver
  • 1 eggplant(s)
  • 4 garlic cloves
  • 1 large tomato(s) or 2 small tomatoes
  • 400 g tomatoes, pureed and lightly seasoned
  • 1 onion(s)
  • 4 sprigs of leaf parsley
  • 150 ml dry white wine
  • 1 tbsp olive oil
  • 1 tsp paprika powder, smoked, sweet
  • 1 tsp game spice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Wash the rabbit and cut into smaller pieces. Mix the oil and spices thoroughly and brush the rabbit with it. Chop the vegetables, remove the stem from the tomato, finely chop the garlic, and place everything in a baking dish. Stir in the tomato puree (e.g., Tomato Frito) and add the rabbit—except for the liver. Cook at 190°C for about 50 minutes. About 15 minutes before the end of the cooking time, add the liver and chopped parsley to the dish. Serve with rosemary potatoes or just fresh white bread.
