Ingredients for 4 servings:
- 500 g flour
- 20 g yeast
- 2 eggs
- 2 tbsp, levelled sugar
- 400 ml milk, lukewarm
- 1 pinch of salt
- n. B. Oil (sunflower oil or rapeseed oil)
- powdered sugar
- jam
- maple syrup
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
In a large bowl, crumble the yeast into lukewarm milk, sugar, and two tablespoons of flour. Mix lightly and let rise slightly. Whisk the eggs with a pinch of salt. Add the flour to the yeast, followed by the eggs, and knead with a dough hook or by hand until smooth. Cover and let rise in a warm place for half an hour. Heat a little oil in a non-stick pan (but not too hot!) and fry 1-2 tablespoon-sized portions of the dough until golden brown on both sides (you can fry up to four in one pan at a time). Poles like to eat racuchy (pronounced ratzuchy) with powdered sugar, homemade jam, or plum jam (powidla). Variations with applesauce and/or maple syrup are also possible.
