Radicchio cream soup with Grana Padano

Ingredients for 4 servings:

  • 1 head of radicchio
  • 1 large potato(s), floury
  • 200 ml white wine
  • 1 tbsp vegetable broth, granulated
  • 1 cup of cream
  • salt and pepper
  • nutmeg
  • 1 tbsp honey
  • 100 g Grana Padano, coarsely grated or cut into small cubes
  • Parsley, chopped
  • 1 tbsp butter

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

very spicy, a nice starter

Cut the radicchio stalk into wedges, wash the leaves, and trim away as much of the white part as possible. Coarsely grate the peeled potato. Place the lettuce leaves and grated potato in a saucepan with the white wine, butter, honey, and cream. Bring to a boil, then simmer over low heat for about 20 minutes. Then purée the soup and season with the spices. Serve the soup in bowls and garnish with Grana Padano and parsley, if desired. This serves 4 as a small appetizer.
