Ingredients for 2 servings:

  • 1 bunch of radishes
  • 1 m.-large onion(s), red
  • 1 organic lemon(s), peel and juice
  • 1 tbsp balsamic vinegar, dark
  • raw cane sugar
  • salt and pepper

Instructions

Working time approx. 10 minutes; Rest time approx. 30 minutes; Total time approx. 40 minutes

Thinly slice the radishes and onion and place them in a bowl. Add a pinch each of salt, pepper, and sugar, mix well, and let stand for 30 minutes. Finely grate the lemon zest and squeeze half of it. Add the lemon zest and juice to the radishes. Add the balsamic vinegar and season with sugar to taste. Let stand in the refrigerator for another 30 minutes. Then season again.
