Radish soup with ginger

Ingredients for 2 servings:

  • 250 g radish(s), white
  • 4 cm ginger root
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 500 ml vegetable stock
  • 1 bay leaf
  • 2 chili peppers

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Wash the radish and cut into 1 cm cubes. Wash the ginger, but do not peel it. Place it in a pot with the radish and add the vegetable stock. Add the bay leaf and chilies. Cook for about 15 minutes, until the radish is soft. Season with sesame oil and vinegar. Remove the ginger and chilies before serving.
