Raffealo – ice cream my way
- Ice powder
- 90 g Perfecto Plus
- 35 g Ice cream perfecto
- 15 g Perfecto binder
- 1 pinch Salt
Coconut flavor
- 12 *Meine Raffaelos
- 1 tsp Coconut flavor
- 695 ml Whole milk
miscellaneous
- 5 *Meine Raffealos
- Chocolate sauce, homemade
Ice Powder & Ice Machine
- Put the ice cream together with a pinch of salt in a bowl and stir together. Add my Raffaelos to chop up. Add whole milk and stir with a mixer on the highest setting for one or two minutes. Then pour into a saucepan and heat while stirring constantly.
- Let it steep for about 85 degrees and 10 minutes. Stir in coconut flavor and stir again at the highest level. Then let it cool down for about 1 hour so that everything connects. Before the raffaelo paste goes into an ice cream machine, stir it again.
- I dumped it in a compressor ice maker and let it freeze for 70 minutes. Then transfer to a freezer. Later take two or three hemispheres and put them in an ice cream sundae. Halve a Raffaelo and place on top. Drizzle with a chocolate sauce.
