Strawberry tiramisu and iced coffee

Ingredients for 5 servings:

  • 1 sponge cake
  • 300 g mascarpone
  • 3 egg yolks
  • 60 g powdered sugar
  • 400 ml orange juice, freshly squeezed, approx.
  • 400 g strawberries
  • 1 pack of chopped pistachios
  • 200 ml espresso
  • 2 tbsp instant coffee powder
  • 4 tbsp sugar
  • 4 egg yolks
  • 3 tbsp rum (Stroh Rum)
  • 200 g cream

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 6 hours; Total time approx. 7 hours

Cut out 5 tartlets from the sponge cake base and cut each in half crosswise, then soak in the orange juice. Beat the egg yolks with the powdered sugar until frothy, then mix in the mascarpone. Slice the strawberries. Place the bottom of each sponge cake in a dessert ring, spread the mascarpone cream on top, arrange the strawberries on top, and place the sponge cake lid on top. Chill. To serve, remove the ring, spread a little more mascarpone cream on top, and garnish with pistachios. For the coffee ice cream, beat the egg yolks with the sugar until frothy, then whip the cream until stiff peaks and fold into the sugar and egg mixture. Dissolve the instant coffee in the espresso, add the rum, and stir into the cream mixture. Pour into glasses and place in the freezer. Remove shortly before serving.
